Notes from the Chef, December 6, 2011: Lebanese!

Tonight’s dinner takes us to Lebanon to sample its delicious fresh Mediterranean cuisine. Enjoy tonight’s Lamb Kofta, a dish that was influenced by the Ottoman Empire. Have a side of cauliflower tossed with Lebanese 7 Spice, a mixture of allspice, black pepper, cinnamon, cloves, fenugreek, nutmeg and ginger. And definitely don’t miss the mezze platter – mezzes are found in all the cuisines of the former Ottoman Empire and come from the Turkish word for ‘taste, flavour, smack, relish’. Our platter tonight has an offering of baba ganoush, hummus, pickled watermelon radish, and more. Enjoy!
