Texas Style Slow Cooked Barbecue

100 Hour Brisket

Beef brisket spice-rubbed & marinated for 24 hours, smoked for 24 hours, vacuum sealed & cooked sous vide for 52 hours, sliced & served with *Cole Slaw (allergens: egg [mayonnaise], alcohol [vinegar]) [on the side] & **Poppy Seed Rolls (allergens: wheat) [on the side]

**Sloppy Seitan
(allergens: wheat [seitan], soy [vegan worcestershire], corn [vegan worcestershire], alcohol [vinegar])
Seitan simmered in tangy & sweet bbq sauce, served with *Cole Slaw (allergens: egg [mayonnaise], alcohol [vinegar]) [on the side] & **Poppy Seed Rolls (allergens: wheat) [on the side]

Texas Style Baked Heirloom Beans
(allergens: alcohol [vinegar], fin fish [worcestershire]) {contains pork} [vegan available]
Rancho Gordo Heirloom Yellow Eye, Rio de Zape, Jacob’s Cattle & black beans cooked with bacon, onion, jalapeno, molasses, hot sauce & brown sugar

*Grilled Mushrooms
(allergens: alcohol [vinegar], dairy [butter])
Crimini & button mushrooms marinated for 48 hours with garlic & chipotle, grilled & tossed in brown butter

Southwest Caesar
(allergens: egg [dressing], fin fish [anchovy], corn [tortilla strips], dairy [cheese])
Romaine lettuce tossed with grilled red onion, jack cheese & crispy tortilla strips, tossed in smoked jalapeno Caesar dressing
