Notes from the Chef, December 27, 2011: Three French Hens

Bonjour! Tonight’s dinner is inspired by a line in that famous carol, the Twelve Days of Christmas – we’re serving up “French Hens” in the form of Coq au Vin – a classic dish of chicken braised with onions, pancetta and red wine. French dishes are highly regional and depend on fresh, flavorful ingredients for their deliciousness. This makes French cuisine a perfect fit for Gastronaut’s use of local, organic produce. There are a couple theories about its origins – maybe a rooster presented to Julius Caesar or an innkeeper cooking a chicken in wine for an unexpected visit from Napoleon. Either way, it’s delicious – bon appetit!
