Notes from the Chef, December 22, 2011: India
It’s time to enjoy the diverse and distinctive food of India – Gastronaut style! The varied spices of India lend any dish an exotic flavor, and today we’re serving up a spicy chicken curry with curry spices, coconut milk, and Petaluma Farms chicken thighs. On the side, enjoy some basmati rice and roasted globe eggplant. Eggplant is a good source of Vitamin K, Vitamin B6, folate, potassium and manganese, and a very good source of dietary fiber. We hope you enjoy today’s lunch!
