Buenos dias! Welcome back to the week. Today we’re serving up a delicious turkey posole! On the side, have a serving of rice steamed with achiote, and mixed medley squashes sautéed with red onions. Achiote is the name for the seeds harvested from the achiote tree, which contain the natural coloring and flavor known as annatto. Achiote is native to Brazil and now grows in tropical regions all over the world. The natural coloring and flavor of the seed has played a large cultural role in Latin American, Caribbean and Asian cultures. We hope you enjoy today’s lunch!
